Back to school season means getting back into a new dining/cooking routine.

Nutritionist Toby Amidor, MS, RD has answers.

Her new book, "The Healthy Meal Prep Cookbook," which came out Aug. 22, said being too busy shouldn't mean that you can't have balanced and delicious meals.

As a working mom and nutritionist, the Scarsdale resident knows how difficult it can be to carve out the time for healthy home cooking. Planning is key. So is strategic food shopping.

Below, she offers some tips for the back to school rush.

  • Batch cook one day a week: This means cooking double or triple the quantity of the recipe so you can enjoy some during the week and freeze the rest for later. Although several hours on one weekend day may be spent in the kitchen, you will free up about an hour each weeknight so you can spend it with your loved ones. Batch cooking isn’t just for dinner -- you can batch cook breakfast, lunch, and snacks too.
  • Create a shopping list: It’s not just about writing down the ingredients and amounts you need, but also writing it in the order you walk through the supermarket. This helps save time and running back and forth between aisles for items you forgot.
  • Creatively reuse dishes: Eating the same dish every night can get boring. That’s why it’s important to plan to eat them in different ways. Amidor's Slow Cooker Barbecue Chicken recipe, for example, is reused in her Barbecue Chicken Pizza recipe and is perfect for the whole family. You can also roll it with lettuce and tomato into a whole grain tortilla or top it over a green salad.
