SOUTH SALEM, N.Y. – Lisa Reeves saw a need in South Salem and moved to filled the vacuum.

“I always thought the town needed a place to go where people could hang out and have a good cup of coffee and something to eat” she said.

Reeves and her husband, residents of South Salem for seven years, bought the old Salem Country Deli on Spring Street and are in the process of renovating it. The new name will be the Spring Street Country Market and Deli.

“We’re trying to give the town something it needs,” she said. “The idea is to have a go-to place. We’re calling it a ‘country market’ so it will have that country feel and look as well. We’ll have things like local honey, old time candy, eggs and soft serve ice cream.”

Of course it will also feature a traditional deli with Boar’s Head cold cuts, as well as hamburgers and Sabrett hot dogs.

“We will have healthy food too,” Reeves said, “like salads for the moms while their kids are having their sandwiches.”

The new business will eventually offer catering service as well.

The Reeves own the Bissell House restaurant in Ridgefield, Conn., and did own the Deer Park Tavern in Katonah before it burned down last year, so they bring plenty of restaurant and food prep experience to the table.

Reeves said they will bring in their chef from the Bissell House to help prepare some great meals, including a deli case of to-go dinners.

Meanwhile, the building is going through some extensive renovations. The Reeves are replacing the kitchen and pushing back the deli counter and moving the cashier’s station to the front of the store.

“We tore up the floor and we discovered there were 14 layers of flooring,” she said. “And see those vines on the wall over there. That’s part of a tree that’s growing through the wall.”

Despite all the restoration challenges, Reeves says they hope to have a grand opening sometime at the beginning of September – perhaps just after Labor Day.

“I’m really excited about it,” she said.
